SUMMER BERRY CHEESECAKE SALAD

This simple recipe Summer Berry Cheesecake Salad recipe comes together with just 4 ingredients. Rich and creamy cheesecake filling is folded into your favorite berries to create the most amazing fruit salad ever!

INGREDIENTS

• strawberries, hulled and cut into quarters

• blueberries, washed and dried (remove stems)

• raspberries, rinsed and dried

• 1 package cream cheese

INSTRUCTIONS

1. Prepare berries and lay them on paper towels to dry while you prepare the cheesecake mixture.

2. In a medium bowl,whip cream cheese until it becomes smooth.

3. Combine berries in a large bowl. Gently fold in cheesecake mixture until completely combined.

4.Chill until ready to serve or serve immediately

Mocha Milkshake

Mocha Milkshake without Icecream

Are you craving a glass of yummy mocha milkshake? Try this recipe! It is rich, chocolaty and the perfect coffee-drink to cool you off this summer.

INGREDIENTS

• 3 cups whole or full-fat milk chilled

• 1 tbsp nutella spread

• 1 tbsp instant coffee powder

• 2 tsp cocoa powder sweetened

• 4 tbsp sugar castor or powdered

• 1 cup ice cubes

• choco chip or grated chocolate & whipping cream for garnishing

INSTRUCTIONS

• In a blender jar, add ice cubes, milk, sugar, coffee powder and cocoa powder and nutella spread.

• Blend for 2-3 minutes or until everything has combined well.

• Pour it into the serving glasses and sprinkle grated chocolate or choco chips and whipping cream over the top.

• Mocha milkshake is ready to serve.

ROOHAFZA MOJITO RECIPE!

Today I am here with an amazing drink to beat this summer heat!

Roohafza refreshing mocktail, a drink made with mint and lemon in virgin mojito style. I have used 7up for this drink.

INGREDIENTS

* Rohaafza –  2 & 1/2 tbsp

* Mint leaves – 10

* Lemon / lime juice – 1 tbsp

* 7up/sprite/soda– 1 cup

* Crushed ice – 1 cup

METHOD

In a large bowl add mint leaves, lemon wedges, lemon juice, roohafza, and 7up!

Mix gently, Top with crushed ice and Garnish with lemon wedge/ slice, fresh mint sprig, and serve chill!

Chicken & Rice Porridge

Ramadan is a the most blessed month of the year where we observe fasting , praying and feasting !!!


I have collaborated with my fellow bloggers to showcase foods of Ramadan that are ideal for Iftar meal!!


I present to you all

”chicken and rice porridge ”

𝙄𝙛𝙩𝙖𝙧 𝙧𝙚𝙘𝙞𝙥𝙚

Ingredients
To cook rice and chicken
👇🏻
👇🏻

  • Oil- 2 tbsp
  • Cloves -2 to 3
  • Cinnamon – 1 small piece
  • Star anise -1 piece
  • Onion, chopped small- 1
  • Garlic -2 to 3 cloves
  • Green chili, chopped- 1
  • Carrot -1 * Peas – needed amount * Chicken, cut small- 1 chicken breasts
  • Tomatoes, chopped- 1
  • Chili powder- 1 tsp
  • Turmeric powder- ¼ tsp
  • Coriander powder- 1 tsp
  • White Rice, (jeerakasala)- ½ cups
  • Water- 1 1/2 cups
  • Salt- 1 tsp
    After cooking rice and chicken

  • Fresh cream -2 tbsp (or )
  • Coconut milk- 2 cups
  • Water- to thin down the porridge
  • Coriander – chopped
  • Salt- if needed

Instructions:

1. Place a pressure cooker or large pot over medium heat, add oil.

2. Add cloves, cinnamon, star anise and onion, season with ¼ tsp salt and saute for a few minutes.

3. Add tomatoes and cook till mashed

4. Add carrots and peas into it

5. Add chicken, combine well.

6. Add chili powder, turmeric powder, coriander powder,Combine well and cook for a few minutes.

7. Add rice along with coriander chopped.

8. Add 1 1/2 cups water, combine well.

9. Cook the rice and chicken till it has cooked well- for 20 minutes.

10. If using pressure cooker cook till 2 to 3 whistles.

11. After the rice and chicken have cooked well, add fresh cream or coconut milk (here I am adding fresh cream).

12. Add 2 cups water to thin it down.

13. Add salt according to your taste buds

14. Switch off the flame and add coriander leaves for garnishing!

15. Serve hot and enjoy!

Notes

•When the porridge gets cold it will thicken up, so before you serve, heat the porridge with little water if you prefer or just serve as thick soup.

•Leftover can be refrigerated and microwave before serving it.

Adding fried small onions is optional, you could even add fried onion- enhances the taste of this porridge greatly.

🍍Pineapple pudding🍍

Today I am here with another Easy Indian Style Eggless Pineapple Pudding Dessert Recipe without gelatin. Made with china grass and condensed milk.

INGREDIENTS


FOR MILK MIXTURE

  • 400 grams Condensed Milk * 2 cups (500 ml) Milk
  • 200 ml cream
  • FOR BOILING AGAR AGAR
  • 1 1/2 cup water
  • 10 grams china grass

  • FOR POACHING PINEAPPLES
  • * 1/2 cup sugar
  • 1 small pineapple

Instructions

  1. clean and cut the pineapple into small bite size pieces. Set aside.
  2. Add the pineapples and sugar in a pan. Let it steam it for 5 minutes. Remove off heat and set aside.
  3. Mix a tin of condensed milk with 2 cups of plain milk and Bring it to a boil. Set aside.
  4. Soak a packet (10 grams) of china grass in water for 10 minutes. Boil the soaked agar agar / china grass mixture on medium flame until completely melted.
  5. Now mix the milk mixture, China grass mixture and layer the pineapple in a bowl or dessert cups!Make sure everything is slightly hot. Pour the milk mixture above the pineapple layer and after 10 min make another layer of pineapple as a topping and cool in the refrigerator for 5-6 hours.
  6. Serve Cold.

🍒🍓🍑Fruit Custard🍒🍓🍑

Fruit custard is a dessert made by mixing chopped seasonal fruits with chilled cusard sauce.

How to make custard without custard powder

Custard powder is nothing but corn starch or corn flour with flavoring ingredients added to it. So If you are not accessible to custard powder, you can make your own using corn flour (corn starch) or arrowroot powder.

To flavor the custard, just use vanilla extract or vanilla bean pod. To enhance the flavor of custard you can also use 3 to 4 tbsp dry milk powder.

INGREDIENTS (1 CUP = 240ML )

• 2 cups milk

• 2 or 2 ½ tablespoons custard powder

• 2 to 3 tablespoons sugar

Fruits of your choice (I have added👇🏻)

• 1 apple – medium sized

• Grapes – few

• Peach – medium sized

• 1 Orange – medium sized

HOW TO MAKE THE RECIPE

Preparation

• Rinse the fruits thoroughly and chill them in the refrigerator

How to make custard

• Heat milk in a wide pan or sauce pot.

• Add sugar and stir until it dissolves.

• Meanwhile add custard powder to a small cup.

• Then pour 3 to 4 tbsp of milk to it. Stir well. Make sure it is free from any lumps.

• When the milk turns hot, pour 2 tbsp of the mix to the hot milk. Stir it until well incorporated.

• Repeat adding little more and stir well. Pour the rest of the mix and stir well to prevent lumps.

• Keep stirring and cook on a low to medium heat until the custard turns thick.

• Switch off the stove and whisk the custard well to make it smooth. Cover immediately.

• Cool this completely and refrigerate

How to make fruit custard

• Whisk the custard well before serving. This ensures even and smooth fruit  custard.

• Peel and chop the fruits to bite size. Add them to serving bowl or individual serving cups.

• Pour the custard over the fruits and gently mix.

• Serve fruit custard immediately.

🍮Caramel pudding🍮

Hello everyone!!!

I hope you all are doing well and staying at home safe!

The first day of Ramadan went really well and I made this caramel pudding for iftar!

So I just thought to share the recipe with you all!

It’s a simple and easy recipe to make, so let’s get into the recipe now!

Ingredients

• sugar – 1-1/2 cups or according to your taste buds

• eggs – 6 Nos

• milk – 3 cups

• vanilla extract – 2 tspn

Instructions:

• In a large pan, cook and stir 3/4 cup sugar over low heat until sugar is melted and golden and Pour into custard cups, tilting to coat bottom of the cup; let sit for 10 minutes.

• In a large bowl, beat the eggs, milk, vanilla and remaining sugar until blended but not foamy. Pour over caramelized sugar.

• Place the cup into a baking pan and pour hot water to a depth of 1 in. Bake at 350° until a toothpick inserted in the center comes out clean, 40-45 minutes. Remove from pans to cool!
