Drumstick gravy or drumstick vegetable recipe made with simple ingredients in south Indian style to serve with rice or roti. Recipe with step by step instruction given below👇🏻👇🏻👇🏻.
- 2 to 3 drumsticks , cut to finger length (try to use tender ones)
- 1 cup onions , finely chopped
- 1/3 cup tomatoes , chopped
- 1 sprig curry leaves
- 1 pinch mustard
- 1 pinch cumin
- 1 tsp red chili powder
- ¼ tsp turmeric
- 1 tsp coriander powder
- 2 to 3 tbsps oil
- Tamarind extract 1 tbsp
- Salt to taste
- water as needed to cook the drumsticks
Add oil to a deep pan and heat it, add mustard & cumin. Allow them to splutter.
Add onions, curry leaves, gingergarlic paste and saute till golden
Add chopped tomatoes, some salt and turmeric. Fry till the tomatoes turn soft and pulpy.
Do not cover and cook but fry in an open pan, since fried tomato gravy tastes better
Add coriander powder, and red chili powder and saute for a min
Pour tamarind extract and cook on a medium flame until the drumstick gets tender.
Cooking the drumsticks on the lowest flame yields a tasty curry.
