This is really healthy and quite easy breakfast recipe to make.
2 to 3 eggs, peeled and chopped
4 white sliced bread
3 to 4 teaspoon mayonnaise
1 teaspoon prepared yellow mustard
salt and pepper to taste
Using an egg slicer or a knife, finely chop the boiled eggs. Add to a large bowl. Add the mayonnaise, mustard, salt, and pepper and mix until blended. Garnish with coriander leaves. Spread the egg mixture on the bread and make sandwiches. Cut each sandwich into two wedges.
You can add fillings and seasonings of your choice like cucumber, capsicum, tomato etc…
